We're honestly not sure if this is even a real sea creature. The purple balls that surround the ballmancer follow it wherever its gelatinous body moves, and it is unclear whether or not they are actually a part of its body or rather an external thing that it controls through some unknown means. We know it eats smaller sea creatures because we've seen every living thing that it happens to absorb never come out again.
